The award-winning Argentine chef Mauro Colagreco lands in Ibiza for the European summer season

El Silencio, the renowned restaurant in Ibiza, will feature a new creative restaurant concept by the Argentine chef, Mauro Colagreco, 3 Michelin stars and considered one of the best chefs in the world for the work he did in Mirazur (France). Colagreco has designed a menu together with his friend, the chef Federico Dessenomaster of cooking with coals in Uruguay, one of the distinctive signs of his country’s cuisine.

The El Silencio restaurant will offer a menu inspired by the Mediterranean lifestyle and that of Argentina and Uruguay, places that have marked the career of both chefs. The cocktail bar will be run by Remy Savage, a French-Irish mixologist belonging to the select group of The World’s 50 Best Bars.

El Silencio is ideal for outdoor lunches and dinners with views over the sea of ​​Ibiza. The menu starts with light dishes that include shrimp aguachile finished with granny smith, cilantro and chili, a classic Peruvian ceviche with fresh peach, chilli and lime… or a wide variety of fresh and attractive salads to which is added grilled eggplant with Manchego cheese and orange and thyme vinaigrette.

The dishes served direct from the coals include grilled prawns with aioli, salt and lemon, a dish that allows you to enjoy the quality of local ingredients in their essence; or XXL anchovies, grilled and a touch of wild thyme. Dishes such as fish and seafood soup and artisan pizzas come out of the clay oven.
«I have a special connection with Spain. It is linked to my origins, Spanish is my first language and I really love the culture and lifestyle of Spain. The atmosphere created by the kindness and hospitality is incredible. I am also especially excited to be able to enjoy the beautiful nature of Ibiza in this fantastic setting that is El Silencio”, explains Mauro Colagreco.

“I share the same passion for grills with Mauro. The menu highlights this passion with simple dishes that highlight the beauty of the island’s fresh products,” says Federico Desseno.

Silence Paris opened in 2011 and was designed by film director David Lynch. In June 2021 Silencio launched El Silencio, a beach house in Cala Moli, Ibiza, and in October 2021 Silencio launched Silencio des Pres, a restaurant, cinema and event space.
